We are collaborating with Professor Dr. Florence Sessoms, Professor Dr. Yu Ma, and Professor Devin Peterson on a project exploring the feasibility of implementing Sunchoke (Jerusalem artichoke) in the food industry. Although originally from Europe, Sunchoke is now considered native to the northern United States and is often regarded as a weed by producers due to its aggressive and rapid growth. We recognize its significant nutritional value, particularly its high inulin content, which offers various health benefits such as promoting healthy bowel function, maintaining gut flora, and managing high cholesterol levels. Additionally, we are studying the crop's performance in phytoremediation of contaminated soils in urban areas. When did you start working for OSU? June 2024 What do you like to do in your free time? In my free time, I enjoy participating in outdoor sports, connecting with people, and studying topics related to global geopolitics, general history, and economic and cultural relations between countries.
